Fresh Persimmons

The Hashimoto Persimmon Farm encompasses a total five hundred persimmon trees on five acres of land.  The fresh fruits are harvested and sold during the months of October, November and sometimes part of December each year.  We grow three primary varieties.  Our latest prices can be found HERE.

Maru

The Maru variety is yellowish in color and is naturally bitter when picked from the tree.  In cooler climates, this variety naturally sweetens during the ripening process. In Hawai‘i’s warmer climate, we must help to accelerate the sweetening process.  Therefore, this variety is cured for 24 hours with carbon dioxide to fully release its sugar.  As a result, it has one of the sweetest flavors.  It is available earlier in the season and can be eaten almost immediately once sold despite looking yellow.

Fuyu

The Fuyu variety is known for its rich orange color.  This variety can be picked right off the tree and can be eaten immediately.  It is a popular variety and is commonly grown in places like California.  The Upcountry soil and climate however, is a winning combination and creates one of the best tasting persimmons you will ever find.

Hachiya

The Hachiya variety is known for being long and pointy.  It is naturally bitter when picked and cannot be eaten without first over-ripening and getting soft.  Once soft, it is very sweet.  Our farm has limited quantities of this variety and it must be ordered well in advance.
